Tasty Tuesday {Cornish Hens}

Today marks the beginning of my birthday month, yes month. There are a lot of fun birthday treats heading my way in the next few weeks. How about some roasted game hens to kick off the festivities.




Ingredients:
Olive oil
Lemon pepper
Poultry seasoning
Thyme
Salt
Garlic powder
Game Hens

Preheat oven to 365

This is so easy, I can't stress that enough. Prior to touching the hens, mix the dry spices together, about a teaspoon each, or to taste, just have about 6 tablespoons of seasoning to rub all over the birds. (Note: the spices can really be whatever you like, even salt and pepper is good.)

Wash the hens and dry well. Pour enough olive oil to cover both birds, then season with the spice mix.

Cook for 60-80 mins, turning in 25 minute intervals to create even browning.

When through cooking, tent the birds with foil for 5-10 minutes and allow to cool on the counter. (Tenting is really important, it helps redistribute the juices and keeps a super moist bird.)
